The Scarsdale Diet Program’s Easy Protein Bread Recipe

If you have committed yourself to the Scarsdale Diet program, you have seen that protein bread is an important part of the diet. Many who have followed the Scarsdale Diet program to lose weight may not be able to find protein bread in their grocery store, or have paid high prices at the grocery store for bread. Here is a simple recipe (but especially good taste) for the bread.

Scarsdale Diet Program’s Protein Bread

Ingredients:

A glass of warm water

A tablespoon of dry yeast

½ teaspoon of salt

A teaspoon of sugar

½ teaspoon apple cider vinegar

½ cup soy flour

¼ cup gluten flour (gluten flour has a lot less carbohydrates than regular flour. You can substitute high-gluten flour if you can’t find gluten flour.)

1 ½ cups whole wheat flour.

Place the water in a medium mixing bowl. Sprinkle dry yeast in the bowl and let stand until the yeast dissolves (five minutes or so). Add salt, sugar, and vinegar to the bowl. Mix well.

Mix soy and gluten flour together. Slowly add the yeast mixture to the bowl.

Sift whole wheat flour and add to the mixture in the bowl. Turn the mixture gently until the dough sticks together (and not to the side of the bowl). If you have a mixer or food processor that has dough hooks, these are great for mixing.

Lightly powder a board or other surface. Scoop the dough into a ball with floured hands and place on the surface. Knead for five minutes until the dough is smooth and elastic.

Place in a small pan that has been sprayed with non-stick spray. Adjust the dough to fit the pan (loaf shape). Do not try to touch the dough to the side of the pan. Cover with a slightly dampened towel and set in a warm place (free from drafts) to rise. Let rise for two to three hours until the dough has at least doubled in size and reached the top of the bread.

Preheat oven to 325 degrees.

Bake the bread in the preheated oven for an hour or until light golden brown.

Scarsdale’s diet bread is denser than regular bread. Cut into thin slices. Store the unused portion in the refrigerator.

To make your Scarsdale bread last longer (or if you want to make more bread in advance); you can double wrap the bread in plastic (after you slice them separately); and store in the freezer. Take what you need out of the freezer, as you would when following the Scarsdale eating program.

Toasting the bread before eating while in the Scarsdale eating program makes the bread more palatable and easier to eat (thick bread will be a little dry and chewy).

If you make yourself eat, it’s not for you; you can find some low cost options on food. You should look for a low fat/low carb option that is whole grain (not white) bread. You will lose the most weight on the Scarsdale Diet program bread by choosing a bread that has more than 4 grams of protein and less than 12 grams of carbohydrates.
